  • 500 g00 Flour
  • 325 mlWater
  • 15 gSalt

Mix sourdough starter and water well.

Add flour and stir until a dough forms.

Rest 30 min (autolyse).

Add salt and knead for 15 min.

Fold the dough 3x over 3 hours (stretch & fold).

Cold ferment 48-72 hours.

Form balls, rest 2-4 hours at room temperature.
